We love this recipe for using our late season tomatoes.....
Tomato

Gilroy Garlic Festival's
Bruschetta

Makes: 6 to 8 servings

Combine:

3 to 4 cups of fresh or drained canned small-diced tomatoes
3 Tablespoons chopped fresh basil
1 Tablespoon chopped fresh parsley
2 to 3 finely chopped plump garlic cloves
a splash of balsamic vinegar
a pinch of red pepper flakes

Taste and adjust seasonings.  Let rest for 30 minutes, if possible.

Spoon a generous amount of tomato mixture on garlic bread.  Sprinkle with grated mozzarella cheese and serve
.

Did you know...
Sewing Machine 101

Recently, I took my sewing machine in for a service call.  The technician reminded me that the pressure foot needed to be in the up position before threading.  The up position opens the tension disks and allows the thread to fit between them.

He also pointed out that if your thread breaks while sewing you may need to turn your thread spool around.  Much like a kink in a hose when it is unwound incorrectly, the thread will become twisted, taunt and finally break.
